Classic Meatloaf with Mashed Potatoes and Cheese


 A hearty and comforting meal, perfect for a warm family dinner.

For the Meatloaf 

- 900g lean ground beef 
- 1 cup breadcrumbs
- 1/2 cup milk 
- 1 medium onion, finely chopped
- 2 garlic cloves, minced 
- 2 large eggs 
- 1 tbsp Worcestershire sauce
 - 1/2 tsp salt
 -1/2 tsp black pepper
 - 1 tsp dried thyme

For the Topping 

- 1/2 cup ketchup 
- 2 tbsp brown sugar 
- 1 tsp Dijon mustard (optional)

For the Mashed Potatoes 

- 900g potatoes, peeled and chopped 
- 1/2 cup milk 
- 1/4 cup unsalted butter 
- Salt and pepper to taste

For Filling & Garnish 

- 1 1/2 cups shredded cheddar cheese
- Fresh parsley, chopped (for garnish)

Preparation Steps: 

1. Preheat oven to 175°C (350°F). Grease a 9x13-inch baking dish. 
2. In a small bowl, combine breadcrumbs and milk. Let soak for 5 minutes. 
3. In a large bowl, mix ground beef, soaked breadcrumbs, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and thyme until well combined. 
4. Shape the meat mixture into a loaf and place it in the prepared baking dish. 
5. In a small bowl, mix ketchup, brown sugar, and Dijon mustard. Spread over the top of the loaf. 
6. Bake for 50-60 minutes, or until internal temperature reaches 71°C (160°F). Let rest for 10 minutes after baking. 
7. While meatloaf is baking, prepare mashed potatoes: Boil potatoes in salted water for 15-20 minutes or until tender. Drain, return to pot, add milk and butter, and mash until smooth. Season with salt and pepper. 
8. Spread mashed potatoes over the baked meatloaf. Top with shredded cheddar cheese. 
9. Broil for 3-5 minutes, or until cheese is melted and bubbly. 
10. Garnish with chopped parsley and serve warm.
