Today, I’m sharing one of my absolute favorite cozy recipes — perfect for cold days or when you just want something warm and satisfying. It’s Italian Spinach with Cheese — a dish that combines fresh greens, creamy cheese, and a touch of Italian flavor. It's easy, nutritious, and incredibly comforting.

🧀 Ingredients (Serves 4)

  • 500g fresh spinach (or 400g frozen spinach, thawed and drained)

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 200g ricotta or cottage cheese

  • 100g shredded mozzarella

  • 50g grated parmesan (optional, but recommended)

  • 1/2 teaspoon ground nutmeg (optional)

  • Salt and black pepper to taste

  • A pinch of dried oregano or basil (optional)


🍽 Instructions

1. Prepare the Spinach:

  • Heat olive oil in a pan over medium heat.

  • Add chopped onion and sauté until soft.

  • Stir in garlic and cook for another minute.

  • Add the spinach and cook until wilted and all moisture has evaporated.

2. Make the Cheese Mixture:

  • In a large bowl, mix ricotta, mozzarella, and parmesan.

  • Season with salt, pepper, and nutmeg.

3. Combine & Assemble:

  • Add the cooked spinach mixture to the cheese and mix until combined.

  • Transfer to a greased baking dish.

  • Sprinkle extra mozzarella or parmesan on top.

4. Bake:

  • Bake in a preheated oven at 180°C (350°F) for 20–25 minutes.

  • The top should be golden and bubbly.
